A Natural Alternative To Bleach or Peracetic Acid for Disinfection of Seafood.

Glutamal BioActive is considered to be a “Natural” means of disinfection of Seafood during Processing. This is the case since the ingredients of this Product are considered as GRAS (Generally Recognized As Safe) for consumption and has been approved for use by the FDA. Unlike Chemical-Based disinfectants, this product does not generate any harmful residual organic chemical by-products which might be considered as mutagenic or carcinogenic.

When used properly on an on-going basis following Sanitation Standard Operating Procedures, and an HACCP (Hazard Analysis Critical Control Plan), Glutamal BioActive is Effective, Safe, and Suitable as an Anti-Microbial Processing Aid for Sea products which will not result in an adulterated product. FSIS Directive 7120.1

The two commonly used alternative to Glutamal BioActive are Chlorine Bleach and Peracetic Acid. Both of which rely upon chemical activity to accomplish disinfection.

Chlorine Bleach is an oxidizing agent, a “chemically reactive substance” and is considered to be a “corrosive”. It produces Free Radicalswhich may act as mutagens, and when combined with Volatile Organic Compounds (VOC's) may create potentially carcinogenic substances. Its use as a microbicide in Meat Processing has been banned in some Countries (Germany and Japan).

Peracetic Acid, which is a combination of Hydrogen Peroxide and Acetic Acid molecules, although less caustic then chlorine bleach, may also react with VOC's in the same manner to potentially create these harmful by-products.

The use of Glutamal BioActive will allow a safer and more natural means of accomplishing the safe and sanitary processing desired.

Having earlier tested Glutamal on contaminated samples of Seafood there was a Log4 reduction of Microorganisms found to be present initially, thus rendering this sample safe for consumption. (See Glutamal Blue Report).
